Chicken N Dumplings 
Serves 10 | Prep Time: 30 min | Cook Time: 2 hrs

What you'll need:

- 8-10 Chicken Thighs
- 3 tbsp. Rosemary
- 1 tbsp. Thyme
- ½ tbsp. Salt 
- ½ tbsp. Ground Black Pepper
- 4-5 Medium Potato’s 

Bott Boi Noodles (Dumplings)
- 2 Cups All Purpose Flour
- 1 tsp. Baking Powder
- 2 Eggs

The Steps:
In a tall stock pot place the chicken thighs in the pot, fill up with water until the chicken is covered, boil for about 30 minutes or until the chicken in cooked through. 
Remove the chicken thighs from the pot, be sure to get any parts that fell off and let cool for about 20 mins. 

In the pot of broth add the salt, pepper, rosemary, thyme and bring back to a simmer. 
Let that simmer while you clean all the meat off the chicken. 
Place the chicken meat in the pot. Clean your potatoes and cut up into bite size chunks, then put in the pot. Cook for about 30min or until the potatoes are tender. 
While this is cooking you can make the noodles.

Bott Boi Noodles (Dumplings)
Mix flour and baking powder together. Beat the eggs first then pour into the bowl of flour. As you mix all together with a fork, add a tbsp. of water at a time to desired consistency (approx. 8 tablespoons).  Consistency, need to be able to roll out the dough so it should be stiff. Roll out on floured board, not to thin, cut into squares, you can use a pizza cutter. 
Bring the pot of chicken up to a rolling boil. Carefully drop each noodle into the pot, you might have to push them down some to make sure they get broth on them, once all are in the pot reduce the heat to a simmer and cover.
Leave covered for 15 min. 

P.S. This is my (Cassidy's) family recipe. It is my go to meal when I'm sick and when the weather starts to get cooler. The more dumplings the better and if you agree you can always double the recipe for the dumpling. You may just have to boil them in a separate pot of chicken broth as it might not all fit in one.
